This Biochemistry textbook examines modem theories and knowledge of biological and chemical processes inside living organisms and related chemical compounds. The general concepts, chemical composition, structure, biological role, properties and other characteristics of the cell, macro- and micronutrients, their physiological role in biochemical transformations in the human body are discussed in detail. The biochemical processes and methods used in the process of processing various agricultural products and the food industry, in the processing of plant and animal raw materials, ensuring its storage and protection from damage to finished products are shown. The textbook is recommended by the decision of the Educational and Methodological Union - Project Management Group (EMU-PMG) in the directions for training personnel with higher and postgraduate education of JSC "Almaty Technological University" for the bachelor students in the group of educational programs "BO68 - Food production" direction of personnel training "6B072 Industrial and manufacturing branches (meeting minutes No 2, dated 30.11.2020).
