Homo and hetero fermentativelactic-acid fermentation are distinguished. During homofermentativefermentation, microorganisms ferment hexoses, mainly to lactic acid, and only trace amounts of by-productsare formed: volatile acids, ethanol, fumaric acid, and CO 2 .
